Creamy Fruit Cake

For Cake:

Put flour, baking powder and soda bi carbonate in a bowl keep aside.

Beat butter add sugar beat more till frothy, then add eggs, vanilla, milk and beat.

Now add flour mixture in batches and fold by spatula bake at mark 4 for 35-40 minutes in pre-heated oven.

Remove from oven and put on rack to cool at room temperaute.

For Assamble Cake:

Beat the cream along with the icing sugar until peaks form.

Cut the sponge cake horizontally.

Soak the sponge with 4 - 5 tbsp syrup from the cocktail can.

Spread the cream on the cake then top with mixed fruit pieces and sandwich and the second cake slice on top and spread with whipped cream on all sides evenly.

Pipe roses of whipped with an icing bag and finish with fruit pieces and cherries.

Cool for 2 hours in the fridge before serving.
