Ingredients

  • Oil for deep frying
  • Corn Flour 2 tbsps
  • Hake or Haddock 4 pieces
  • Groundnut Oil a little
  • Garlic Cloves peeled & finely sliced 4 plump
  • Hot Red chillies seeded & finely chopped 3 small
  • Spring Onions shredded 4
  • Light Soy Sauce 1 tbsp
  • Thai Fish sauce 1 tbsp
  • Sugar a pinch
  • Handful Basil Leaves
  • Handful Coriander Leaves chopped

Cooking Directions

  1. Heat the oil in a deep pan 190 degree F.

  2. Put the corn flour on a plate and dredge the fish fillets through it, patting them into make some of the cornflour stick.

  3. Fry the fish until golden.

  4. This should take only 3-4 minutes.

  5. Lift out and drain on kitchen paper.

  6. Pour a little groundnut oil into a hot wok.

  7. Get it very hot then add the garlic, chillies and spring onions.

  8. Stir quickly and don't let the garlic burn.

  9. Add the soy, fish sauce, sugar and 2 tbsps water or stock.

  10. Stir in the basil and coriander.

  11. Put the fish on hot plates and pour over the sauce.

  12. Serve immediately.
