  • Chicken 400 gm
  • Corn flour 2 tbsp
  • Garlic 1 tsp
  • Carrots 1
  • Cauliflower 1 cup
  • Capsicum 1
  • Chicken stock 1- ½ cup
  • Black pepper 1 tsp
  • Salt ½ tsp
  • Chinese salt ½ tsp
  • Tomato Ketchup 1 cup
  • Vinegar 1 tbsp
  • Oil 4 tbsp
  • Eggs 2
  • Corn flour ½ cup
  • Rice Noodles 1 packet
  • Oil cup (for frying)

Cooking Directions

  1. In a large pan, heat oil for frying.

  2. Add the chopped garlic and fry till it turns golden brown.

  3. Now add the chicken.

  4. Cover and cook for 5 minutes on a low flame.

  5. Now cook the chicken on a medium flame till the oil forms a separate layer on top.

  6. Now add in all the chopped vegetables and cook for 2 minutes.

  7. Now add in the chicken stock.

  8. When the mixture starts to boil add black pepper, salt , vinegar, Chinese salt, tomato ketchup.

  9. Dissolve 2 tbsp corn flour in some water and pour it into the pan, stirring continuously.

  10. Turn the flame off.

  11. In a separate pan boil the noodles.

  12. Add a little salt for taste and some oil to prevent the noodles from sticking together.

  13. Sieve the noodles and brush them with oil.

  14. On a plate add ½ cup corn flour.

  15. Coat the noodles with the corn flour and deep fry them until they become crispy.

  16. Now to make an omelet take a bowl and beat the two eggs together, add some salt and pepper and fry the mixture.

  17. Cut the omelet lengthwise.

  18. Now in platter place the rice noodles and pour the chicken mixture over it.

  19. Top it with the omelet.
