Ingredients

  • Small brinjals 12
  • Coriander seeds 6 tbsps
  • Green chillies 4
  • Large onions 2
  • Large tomatoes(chopped) 4
  • Grated coconut 1/2
  • Cloves garlic 6
  • Gingely seeds 30 gms
  • Turmeric powder 2 tsps
  • Tamarind 120 gms
  • Mustard seeds 1 tsp
  • Jaggery a medium sized piece
  • Gingely oil
  • Salt to taste
  • Curry leaves a few

Cooking Directions

  1. Cut brinjals lengthwise in quarters without breaking off the stalks.

  2. Heat the oil and fry brinjals till brownish in colour. Remove.

  3. In a spoonful of oil, fry the coriander seeds, chillies and chopped onion.

  4. Then grind together with grated coconut and garlic.

  5. Roast the gingely seeds, separately and grind to a powder.

  6. Remove the pulp from the tamarind by soaking it in water and add to the ground masala.

  7. Take 1 tsp of oil, add mustard seeds and let it crackle.

  8. Add curry leaves. Then add all the masalas and brinjals.

  9. Add jaggery and cook till thick gravy is obtained and brinjals are tender.
