Chicken Makhni - Chef Azad of Karachi's popular restaurant Tandoori Hut has revealed their recipe of Chicken Makhni. Marinated chicken is baked in a tandoor (clay oven) and cooked in a tomato based curry.

  • Oil 3 tbsp
  • Chicken boneless (Barbecued) 1/2 kg
  • Chopped garlic 1 tsp
  • Tomatoes cut into small pieces 1-2
  • Slat to taste
  • Turmeric powder 3/4 tsp
  • Tomato paste 1 tbsp
  • Crushed red chilli 1/2 tsp
  • Cumin powder 1/2 tsp
  • All spice 1/2 tsp
  • Fresh cream 7 tbsp
  • Melted butter 200 gm
  • For BBQ chicken:
  • Red chili 1/2 tsp
  • All spice 1/2 tsp
  • Cumin powder 1/2 tsp
  • Curd 1/2 cup
  • Ginger garlic paste 1 tsp

Cooking Directions

  1. For BBQ chicken: Mix chicken and all BBQ ingredients and marinate for at least half an hour.

  2. Then BBQ the marinated chicken in the Clay oven (tandoor) for 10 min or you can broil it on a BBQ grill. If neither is available at home, then simply cook the marinated chicken till and finish it with inflamed coal smoke.

  3. For tomato paste: Boil tomatoes and blend them. Then sieve the paste to remove the tomato seeds. Then cook it adding some oil.

  4. Heat a clay pot (haandi). Add oil and saute’ garlic.

  5. Then add tomatoes and add salt, turmeric powder and cover with the lid and cook for 2 to 3 min.

  6. So that tomatoes get cooked properly.

  7. Add barbecued chicken, tomato paste, fresh cream and all the other spices.

  8. Stir, simmer lightly and in the end pour melted butter on the top.

  9. Serve hot with naan.
