This a unique and authentic Rajasthani curry which is quick to make and very easy. The mildly tangy flavor of the curry goes really well with plain boiled rice.

Ingredients

  • Papad 2 - 3 medium sized (cut in 1” squares)
  • Cumin ¼ tsp
  • Mustard seeds ¼ tsp
  • Chili powder ½ tsp
  • Curd 1 tbsp
  • Turmeric ¼ tsp
  • Water 1 cup
  • Salt to taste
  • Oil 1 tbsp
  • Coriander 1 tsp (chopped)

Cooking Directions

  1. Heat oil, add cumin seeds and mustard seeds.

  2. Add chili powder, curd, turmeric, water and salt. Boil.

  3. Add papads and coriander.

  4. Cook for 3 - 4 minutes.

  5. Serve papad ki sabzi hot with chappatis or boiled rice.
