Ingredients

  • Whole chicken 1
  • Vinegar 1 cup
  • Red chili powder 1 tsp
  • Black pepper 1 tsp
  • Oil 1 tbsp
  • Salt 1/2 tsp
  • Garlic paste 2 tsp
  • Lemon juice as required
  • Coal 2 pieces
  • Ingredients for Spices:
  • Whole red chilies 50 gm
  • Rock salt (kala namak) 1 tsp
  • Carom seeds 1 tsp
  • Citric acid 1/2 tsp
  • Fennel seeds 2 tsp
  • Cumin seeds 2 tsp
  • Coriander seeds 2 tbsp

Cooking Directions

  1. On a heated griddle pan (tawa), stir together whole red chilies, carom seeds, fennel seeds, cumin seeds and coriander seeds.

  2. Crush the spice mixture and rock salt and citric acid.

  3. Then marinate the chicken with salt, vinegar, red chili powder, black pepper and garlic paste.

  4. Keep in refrigerator overnight.

  5. Bake marinated chicken in a pre heated oven at 180 c for half an hour.

  6. Then insert baked chicken in a skewers and roast on coal pieces for some time.

  7. Brush chicken with oil while roasting.

  8. Cut chicken into 4 pieces and sprinkle prepared spices and lemon juice on top before serving.

  9. Sajji Masala is ready.
