Ingredients

  • For the tortillas:
  • Maize flour (makai ka atta) 3/4 cup
  • Plain flour (maida) 3/4 cup
  • Oil 4 tsp
  • Salt 3/4 tsp
  • For the refried beans:
  • Red kidney beans(soaked) 1 cup
  • Tomatoes(chopped) 1 cup
  • Sliced onions 1/2 cup
  • Garlic(chopped) 1 clove
  • Green chillies(chopped) 3
  • Sugar 2 tsp
  • Roasted cumin seed powder 1 tsp
  • Butter 2 tbsp
  • Oil 2 tbsp
  • Salt to taste
  • For the vegetable layer:
  • Sliced onion 1/2 cup
  • Chopped capsicum 1/4 cup
  • Corn kernels (makai ke dane) 1/2 cup
  • Sliced mushrooms 1 cup
  • Tabasco sauce 1 tsp
  • Oil 1 tbsp
  • Salt and pepper to taste
  • For the white sauce:
  • Plain flour (maida) 1 tbsp
  • Milk 1 cup
  • Butter 1 tbsp
  • Salt and pepper to taste
  • For the garnish:
  • Grated cheese 1/2 cup

Cooking Directions

  1. For the tortillas:

  2. Combine both the flours, oil and salt in a bowl and mix well.

  3. Add enough warm water and knead into a soft dough.

  4. Divide dough into 3 equal portions & roll out each portion into circle of 175 mm. 7" diameter.

  5. Cook each dough circle on a tava lightly on both the sides and keep aside.

  6. For the refried beans:

  7. Heat the butter and oil in a pressure cooker, add the onions and saute till the onions translucent, while stirring continuously.

  8. Add the garlic and green chillies and saute for a few more seconds.

  9. Add all remaining ingredients & pressure cook for 4-5 whistles or till rajma are cooked.

  10. Allow the steam to escape before opening the lid.

  11. Keep aside to cool. Mash lightly with a spoon and keep aside.

  12. For vegetable layer:

  13. Heat the oil in a deep pan, add the onions and saute till the onions turns translucent, while stirring continuously.

  14. Add the onions, capsicum, corn and mushrooms, mix well and cook on a medium flame till the mushrooms turn soft.

  15. Add the Tabasco sauce, salt and pepper and mix well. Keep aside.

  16. For the White Sauce:

  17. Heat the butter in a deep pan, add the flour and cook on a slow flame until froth appers, while stirring continuously.

  18. Add the milk gradually and stir continuously until the sauce thickens.

  19. Add the salt and pepper and mix well. Keep aside.

  20. How to proceed:

  21. Grease a 200 mm. 8" ovenproof dish lightly with butter.

  22. Place 1 tortilla at bottom of dish and spread refried beans over the tortilla.

  23. Place another tortilla on top and spread the vegetable layer evenly over it.

  24. Finally place the third tortilla on top and pour the white sauce evenly over it.

  25. Garnish with grated cheese and bake in a pre-heated oven at 200 degree C for 15 minutes.

  26. Serve hot.
