Chargah is a Lahori whole cooked chicken. It is nicely marinated chicken cooked on flame and coals. Here's a delicious, convenient homemade chargah recipe for you to enjoy.

  • Whole chicken 1 kg
  • Yogurt 1/2 cup
  • Vinegar 1/2 cup
  • Red chilli powder 1 tbsp
  • Roasted and ground cumin seeds 1 tsp
  • Ginger/garlic paste 2 tbsp
  • Salt to taste
  • Lemon 2
  • Black pepper powder 1 tsp
  • Turmeric powder 1/4 tsp
  • Oil as required
  • Food coloring 1/4 tsp

Cooking Directions

  1. Wash the chicken and make deep cuts in it with the help of a knife.

  2. Mix food coloring in vinegar and spread it over the chicken.

  3. Leave it for 1 hour to marinate.

  4. Put yogurt, ginger/garlic paste, red chillies, cumin powder, black pepper and salt in a bowl and whisk well.

  5. Rub the yogurt mixture on the chicken and leave it for another 1 hour to marinate.

  6. Keep chicken in an open-mouthed pot, without adding oil or water.

  7. Cover and cook on very low flame for 15 minutes.

  8. Heat oil in a large wok and fry the chicken in it.

  9. When the chicken turns golden, take it out in a dish.

  10. Serve with fried potatoes and naan.
