It's a great way to make bitter gourds which are probably the least popular vegetables in the world. some people also do a meat stuffing, will post a different recipe for that later.

  • Bitter-gourds (karelas) 8 medium
  • Potatoes 2 large
  • Tomato 1 ripe
  • Onion 1
  • Turmeric powder 1/4 tsp
  • Chili powder 1/2 tsp
  • Garam masala 3/4 tsp
  • Ghee or oil 7-9 tbsp
  • Salt to taste

Cooking Directions

  1. Scrape gourds well, cut into halves lengthwise, smear with plenty of salt and leave for 1 hour.

  2. Then wash them out well several times so as to remove the bitterness.

  3. Then squeeze out all the water. Scoop out and discard the central pulp.

  4. Boil potatoes till very soft, peel and mash very well.

  5. Heat 1 tbsp ghee well in a pan and fry the chopped onion in it till golden brown.

  6. Then chop and add the tomato and when very soft add salt, garam masala, chili powder and turmeric.

  7. Add potato and stir well. Remove from heat.

  8. Stuff this mixture into the bitter gourds and tie each with a piece of string or thread.

  9. Then heat 6-8 tbsp full of ghee or oil, in a deep frying pan, put the stuffed gourds in, one by one, and when brown, remove and drain.

  10. Be sure to lower the heat when frying the gourds.

  11. Before serving, remove thread.
