  • کابلی چنے دو کپ (White Chickpeas 2 cup)
  • پانی چھ کپ (Water 6 cup)
  • گھی آدھا کپ (Ghee ½ cup)
  • زیرہ ایک چوتھائی چائے کا چمچ (Cumin seeds ¼ tsp)
  • میتھی دانے ایک چوتھائی چائے کا چمچ (Fenugreek seeds ¼ tsp)
  • پیاز دو کپ (Onion 2 cup)
  • کُٹی کالی مرچ حسبِ ضرورت (Crushed black pepper as required)
  • لہسن دس جوئے (Garlic 10 cloves)
  • ادرک ایک کھانے کا چمچ (Ginger 1 tbsp)
  • چھولے اسپائس مکس ساڑھے تین کھانے کا چمچ (chickpeas spice mix 3 ½ tbsp)
  • دہی تین کھانے کے چمچ (Yogurt 3 tbsp)
  • ٹماٹر آدھا کپ (Tomatoes ½ cup)
  • آمچور ایک چائے کا چمچ (Dried Mango powder 1 tsp)
  • تیز پتہ تین عدد (Bay leaf 3)
  • دیسی اُبلے انڈے سات عدد (Boiled eggs 7)
  • دیسی چکن لیگ چھ عدد (Chicken legs 6)
  • نمک حسبِ ذائقہ (Salt to taste)

  1. چنوں کو رات بھر بھگو  (soak)کر رکھ دیں اور پانی سے چھان لیں۔ اور چنوں میں پانی ڈال کر ابال لیں ۔

  2. گھی گرم کرکے اس میں دیسی چکن لیگ (chicken leg) اور ساتھ میں زیرہ اور میتھی دانے بھون (roast) لیں۔

  3. اب پیاز، نمک اور کُٹی کالی مرچ ڈال کر پکائیں (cook

  4. پھر ادرک، لہسن اور دہی شامل کر دیں۔

  5. اس کے بعد ٹماٹر، آمچور، تیز پتہ اور تھوڑا پانی ڈال کر دَم پر رکھ دیں۔

  6. اب اس میں چھولے شامل (mix) کریں۔

  7. اُبلے (boiled) انڈوں اور ہرا دھنیا سے گارنش (garnish) کرکے سرو  (serve)کریں۔

  9. I tend to concur with Waqas on this one. True the chefs put their own characteristic style on recipes but please also note the title of the recipe is not CHOLEY but CHIKKAR choley. I agree with Waqas that the original or the usual chikkar chollas are vastly different from what result from this recipe. I agree that Maida has her own distinct style but then she should refrain from calling it CHIKKAR cholley which are sort of patented for a particular brand of cooking chickpeas.
