Ridge gourd is a very popular dish of subcontinent. In 16th century, a kind of Bhujia used to be prepared with Ridge gourd. It was a commonly cooked dish of that period. Chef Zakir has made it a delicious and healthy dish with his unique and distinctive cooking style.

  • Ridge gourd 300 gm
  • Onion 1
  • Tomatoes 2
  • Coriander leaves ½ bunch
  • Red chili 1 tbsp (crushed)
  • Cumin ½ tbsp (crushed)
  • Coriander ½ tbsp (crushed)
  • Ginger garlic paste 1 tbsp
  • Turmeric 1 tsp
  • Salt to taste
  • Oil as required

Cooking Directions

  1. Peel and slice ridge gourd then take out thick seeds.

  2. Fry ginger garlic paste in hot oil.

  3. Add ridge gourd for 6 to 7 minutes.

  4. Add thinly sliced tomatoes, coriander leaves and onion.

  5. Leaves it to cook for a while.

  6. Add crushed red chili, salt, cumin seeds and turmeric.

  7. Fry till the water dries up and ridge gourd is tender.

  8. Garnish with coriander leaves and serve with hot chapatti.
