My mother used to make it Peanut Butter Pie with this recipe and I used to wonder that how does she make it so delicious and different than all other places.   • Peanuts 1/3 cup (dry-roasted, coarsely ground)
  • Cracker crumbs 1 ¼ cup
  • Granulated sugar 2 tbsp
  • Butter ¼ cup plus 2 tbsp (melted)
  • Granulated sugar 2/3 cup
  • Salt ¼ tsp
  • Cornstarch 3 tbsp
  • Evaporated milk 2 ½ cup
  • Peanut butter ½ cup
  • Vanilla extract 1 tsp
  • Peanut butter morsels ½ cup
  • Cream for servings (whipped)
  • Egg yolks 2 (beaten)

Cooking Directions

  1. Preheat the oven to 350 F degrees.

  2. Add crumbs, peanuts and 2 tbsp sugar and stir it in melted butter.

  3. Take a lightly greased 9 inch pie plate and firmly press crumb mixture.

  4. Bake it for 8 minutes or till it is browned.

  5. Take it out and let it cool.

  6. Now combine 2/3 cup sugar, salt, egg yolks, cornstarch in a saucepan and stir it gradually in evaporated milk on medium heat until mixture is thickened and bubbly.

  7. Keep it stirring till is thickened.

  8. Remove it from stove and stir in peanut butter, vanilla extract and morsels till morsels are melt.

  9. Finally pour the filing on to the baked crust and cover it and let it cool down for three hours or until firm.

  10. Serve it with whipped cream.
