  • Ripe tomatoes ½ kg
  • Garlic cloves 6
  • Green bell pepper 1 small
  • Olive oil 1/3 cup
  • Paprika or red chili powder 2 tbsp
  • Salt as taste
  • Pepper as taste

Cooking Directions

  1. Dice tomatoes, bell pepper & garlic, place in sauce pan.

  2. Over medium heat, cook the mixture for 20 minutes, uncovered, stir frequently with wooden spoon.

  3. When the vegetables become soften, add the oil & spices, cook for another 10 minutes, keep stirring with wooden spoon.

  4. When the mixture is well blended and most of the liquid have evaporated, the matboucha is ready, cool & store in a covered container in the refrigerator.

  5. Serve it cold with Pita bread or toasted crackers.
