Matboucha Appetizer Moroccan

Dice tomatoes, bell pepper & garlic, place in sauce pan.

Over medium heat, cook the mixture for 20 minutes, uncovered, stir frequently with wooden spoon.

When the vegetables become soften, add the oil & spices, cook for another 10 minutes, keep stirring with wooden spoon.

When the mixture is well blended and most of the liquid have evaporated, the matboucha is ready, cool & store in a covered container in the refrigerator.

Serve it cold with Pita bread or toasted crackers.
