Ingredients

  • Chicken ½ kg
  • Basmati rice ½ kg
  • Salt to taste
  • Black pepper to taste
  • Nutmeg powder ¼ tsp
  • Mace powder ¼ tsp
  • Coriander 1 tsp (crushed)
  • White cumin ½ tsp
  • Black pepper ¼ tsp
  • Cloves 5
  • Black cardamom 2
  • Cinnamon sticks few
  • Bay leaves few
  • Star aniseeds 2
  • Clarified butter 100 gm
  • Ginger garlic paste 1 tbsp
  • Onion ½ kg
  • Raisin 1 tbsp
  • Almond 1 tbsp
  • Dried plums 100 gm
  • Potatoes 100 gm
  • Egg 2

Cooking Directions

  1. Soak basmati rice for half an hour.

  2. Grind sliced onions and fry the other finely sliced onion till golden brown.

  3. Add clarified butter to a medium sized cooking pot and let it melt.

  4. Then add ginger garlic paste and sauté for a couple of minutes.

  5. Now add onion puree, cumin seeds, whole black pepper, cloves, black cardamoms, cinnamon sticks, bay leaves and star aniseeds.

  6. Sauté until the puree is golden brown.

  7. Then add chicken and mix briefly.

  8. Now add crushed coriander, cumin seeds, salt n black pepper, raisins, almonds, dried plum and potatoes.

  9. Add water if required to cook meat.

  10. When meat is tender, take it off the flame.

  11. In a medium sized cooking pot, boil water.

  12. When water comes to a boil, add 1 tbsp oil, salt and rice and cook until rice is 1/3 cooked.

  13. Boil eggs and remove the shell.

  14. Add boiled rice to the other cooking pot where you cooked chicken.

  15. Sprinkle saffron and cover to let simmer for 8 – 10 minutes.

  16. Garnish with fried eggs and serve.
