Ingredients

  • Lamb heart 250 gm
  • Lamb liver 250 gm
  • Lamb kidney 250 gm
  • Lamb brain 1
  • Yogurt 2 cups
  • Fresh coriander ½ bunch
  • Green chilies 5 to 6
  • Clarified butter ½ cup
  • Black pepper 1 tsp (crushed)
  • Fenugreek seeds 1 tsp (crushed)
  • Fennel seeds 1 tsp (crushed)
  • Turmeric powder 1 tsp
  • Fenugreek 1 tsp
  • Coriander 1 tbsp (roasted and crushed)
  • Cumin 1 tbsp (roasted and crushed)
  • Onion seeds 1/3 tsp
  • Ginger garlic paste 2 tbsp
  • Ginger water 2 tbsp
  • Red chili flakes 2 tbsp
  • Salt to taste

Cooking Directions

  1. Cut lamb heart, lamb liver and lamb kidney into small pieces.

  2. Soak in ginger water and put aside for 10 to 15 minutes then wash.

  3. In a cooking pot, boil lamb brain with some water and turmeric powder.

  4. Strain away excess water.

  5. On a tawa, add pieces of liver, kidney and heart with ginger garlic paste and yogurt and cover to allow cooking.

  6. When heart, liver and kidney are tender, add crushed black pepper crushed fenugreek seeds, crushed fennel seeds, roasted and crushed coriander, roasted and crushed cumin, onion seeds, red chili flakes, salt to taste, clarified butter and green chilies and sauté.

  7. When kidney, liver and heart are ready, add small pieces of brain and cook for another 2 to 3 minutes.

  8. In the end, add fenugreek and fresh coriander and mix.

  9. Spicy heart, kidney, liver, brain is ready to serve.
