  • دُودھ تین لیٹر (Milk 3 litres)
  • چینی آدھا کلو (Sugar ½ kg)
  • ربڑی ایک پاؤ (Rabri 250 gm)
  • پانی ایک لیٹر (Water 1 litre)
  • ٹاٹری ایک چائے کا چمچ (Tatry 1 tsp)
  • الائچی بیس عدد (Cardamoms 20)
  • پستہ بیس عدد (Pistachios 20)
  • بادام دس عدد (Almonds 10)

  1. پین میں دُودھ ڈال کر گرم (heat) کریں۔

  2. جب گرم ہو جائے تو اس میں ٹاٹری ڈال دیں۔

  3. جب دُودھ پھٹ  (burst)جائے یعنی پانی الگ اور چیز  (cheese)الگ ہو جائے۔

  4. اب اس کا پانی گرا دیں اور اسے ململ کے کپڑے میں ڈال کر لٹکا دیں تاکہ اس کا سارا پانی نکل جائے نچوڑ لیں۔

  5. اب ایک پین (pan) میں چینی اور پانی ڈال کر پتلا شیرہ تیار کرلیں۔

  6. چیز  (cheese)کو ہموار سطح پر رکھ کر ہاتھ سے دبائیں اور اس کی بالز  (balls)تیار کرلیں اور اس میں ہری الائچی کے دو سے تین (2-3) دانے بالز  (balls)کے بیج میں بھر (filling) دیں۔

  7. اب ان بالز کو پین (pan) میں شیرے میں ڈال دیں ایک پین (pan) میں دُودھ گرم کرلیں اور اس میں الائچی، چینی اور ربڑی ڈال دیں اور اسے اُتار کر ٹھنڈا (cold) کرلیں۔

  8. اب اس تیار رس ملائی کو برتن میں ڈال دیں۔

  9. آخر میں بادام اور پستے سے سجا (decorate) لیں اور ٹھنڈا (cold) کرکے پیش کریں۔ مزیدار رس ملائی تیار ہے۔

  2. Sorry to say you gave wrong recipe n then accept good comments .you didn't mentioned what to do with that RABRI (250gm) which u wrote in ingredients. So try it first urself n then suggest others.

  25. Zehra, to save the rasmalai from falling apart while cooking, make sure you don't let the cheese dry in open air or it will turn tough. It will be then difficult to work with and you will left with cracks in cheese balls. After squeezing all the liquid out of the cheese, immediately form the cheese in round smooth balls.
