Tandoori Chicken - The chicken delicacy of Moti Mahal restaurant of Peshawar, Pakistan is popular all over the world. Enjoy this mildly hot recipe of tandoori chicken, tenderized with unripe papaya. You can also deep fry the chicken and steam later, if you don't have a oven.

Ingredients

  • Small chicken (with the skin removed) 1
  • Lemon juice 1 tbsp
  • Grind Together:
  • Cloves of garlic 3
  • Unripe papaya 1" piece
  • Ginger 1/2" piece
  • Green cardamoms 4
  • Peppercorns 4
  • Chilli powder 1/2 tsp
  • Nutmeg a pinch
  • Salt to taste
  • For Tandoor Spice:
  • Well-beaten curd 1 cup
  • Tomato ketchup 2 tbsp
  • Vinegar 2 tbsp
  • Salad oil 1/2 tbsp
  • Red food color drops 2-3
  • Kashmiri chillies (ground) 2
  • Salt to taste

Cooking Directions

  1. Apply ground spice to the chicken and keep it for ten hours in the refrigerator.

  2. Remove and apply the tandoor spice evenly inside and out and bake it in an oven or tandoor (clay oven) for 1/2 an hour.

  3. When chicken is tender, remove and serve hot.
