  • Prawns 600 gm (peeled)
  • Oil 3 tbsp
  • Mustard seeds ½ tsp
  • Curry leaves 12
  • Onions 2 (thinly sliced)
  • Fresh root ginger 2 inches (peeled and grated)
  • Garlic cloves 2 (crushed)
  • Red chilli powder as desired
  • Turmeric powder½ tsp
  • Coriander powder ½ tsp
  • Tomatoes 4 large (roughly chopped)
  • Coconut cream 200 ml
  • Coconut milk 200 ml
  • Lemon juice as required
  • Brown sugar 1 tbsp
  • Salt a pinch
  • Fresh coriander sprigs for garnishing

Cooking Directions

  1. Heat the oil in a large sauté pan or wok, and add the mustard seeds.

  2. When they start to pop, add the curry leaves and fry them for a minute.

  3. Then add onions, ginger and garlic.

  4. Cook on low heat for 5 minutes, and then add the red chilli powder, turmeric powder and coriander powder.

  5. Cook for two more minutes and then add tomatoes, coconut cream and coconut milk.

  6. Bring to the boil, and then simmer for 15 minutes.

  7. Add lemon juice, brown sugar and a pinch of salt.

  8. Add prawns and cook for 10 minutes.

  9. Dish out, garnish with fresh coriander sprigs and serve hot.
