A zesty, rich and dark food cake. Cake sponge made of dark chocolate and dark brown sugar, with lemon and orange frosting and a garnishing of orange peel. No wonder its called "Devils Food Cake".

Ingredients

  • Dark chocolate 3, 1/2 ounces
  • Self raising flour 2, 1/4 cup
  • Baking soda 1 tsp
  • Butter 1 cup
  • Dark brown sugar 2, 2/3 cup
  • Vanilla extract 1 tsp
  • Eggs 3
  • Buttermilk 1/2 cup
  • Boiling water 2 cup
  • For Frosting:
  • Superfine sugar 1, 1/3 cup
  • Egg whites 2
  • lemon juice 1 tbsp
  • Orange juice 3 tbsp
  • Orange peel for garnishing

Cooking Directions

  1. Lightly grease and flour two shallow 8 inch round cake pans.

  2. Melt the chocolate in a pan.

  3. Sift the flour and baking soda together.

  4. Beat the butter and dark brown sugar in a bowl until pale and fluffy.

  5. Beat in the vanilla extract and the eggs, one at a time and beating well after each addition.

  6. Add a little extra flour if the mixture is beginning to curdle.

  7. Fold the melted chocolate into the mixture until well blended.

  8. Gradually fold in the remaining flour, then stir in the buttermilk and boiling water.

  9. Divide the mixture between the pans and level the tops.

  10. Bake in a preheated oven at 375 degree F for 30 minutes, until springy to the touch.

  11. Cool the cakes in the pans for 5 minutes, then transfer to a wire rack to cool completely.

  12. Place the frosting ingredients in a double boiler over gently simmering water.

  13. Beat, preferably with an electric beater, until thickened and forming soft peaks.

  14. Remove from the heat and beat until the mixture is cool.

  15. Sandwich the 2 cakes together with a little of the frosting, then spread the remainder over the sides and top of the cake, swirling it as you do so.

  16. Garnish with the candied orange peel.
