In a mixing bowl add 2 tbsp of butter, papaya paste, red chili powder, white pepper, lemon juice, ginger garlic paste, crushed black pepper, yogurt, white vinegar and salt to mix and marinate mutton leg for about 4 - 5 hours.
Fold it in with cling film and put it in steamer for 20 to 25 minutes.
Then bake it in oven for 10 to 15 minutes on 200 C and brush with remaining butter during baking.
