Mandiya - Tamarind is a sour cooking ingredient and is lavishly used in Pakistani and Indian cooking. Mandiya is a very delicious tamarind curry, made with water from cooked rice and lentils, pices, cooked in ghee.

Ingredients

  • Water from cooked rice 4 cup
  • Water from cooked lentils 2 cup
  • Sugar 3-4 tbsp
  • Chilli powder 2, 1/2 tsp
  • Finely cut green chillies 3
  • Ginger (cut finely) 1" piece
  • Fenugreek seeds 1/4 tsp
  • Cumin seeds 1/4 tsp
  • Chopped coriander 2 tbsp
  • Asafoetida a pinch
  • Tamarind a small ball
  • Salt to taste
  • Ghee as required

Cooking Directions

  1. Soak tamarind in 1 cup water.

  2. Squeeze out all the juice.

  3. Mix all the liquids together and set to boil.

  4. Add a seasoning of fenugreek seeds, cumin seeds and asafoetida.

  5. Then add all the other ingredients and cook till ready.

  6. Serve with rice.
