Ingredients

  • Capsicum (sweet peppers) 6-8 large
  • Shelled peas 2 oz
  • Potatoes 3
  • Onions 1 small
  • Chili powder 1/4 tsp
  • Turmeric powder 1/4 tsp
  • Mango powder (amchoor) 1/4 tsp
  • Garam masala 1/4 tsp
  • Pomegranate seeds a few
  • Ghee
  • Salt to taste

Cooking Directions

  1. Wash the capsicums and boil them whole on a medium heat till they are tender but still crisp, and lighter in shade.

  2. Remove, drain and let cool.

  3. Peel the potatoes and boil with peas in a little salted water.

  4. When done, remove from heat and mash with a fork. Hop the onion very fine.

  5. Heat 2 tsp of ghee in a frying pan and brown the onions.

  6. Add the mashed mixture and the spices and fry together.

  7. With a very sharp knife, gently cut out the stem and seeds of the capsicums.

  8. Stuff the potato mixture into the capsicums and then tie them carefully with a string.

  9. Heat the ghee in a kerai and fry the stuffed capsicums on all sides.

  10. Snip off the threads before serving.
