Roasted almonds makes a great sweet to be enjoyed with evenings tea. It is also great for drop-in guests. Almonds are cooked in cinnamon flavored sugar syrup (that has been lightly fragrance with rose water) and then baked.

Ingredients

  • Almonds 450 g
  • Sugar 450 g
  • Water 225 ml
  • Cinnamon 1 tsp
  • Rose water 125 ml
  • Oil for greasing

Cooking Directions

  1. Preheat oven to gas mark 6/200º C.

  2. Rub the almonds with a dry cloth.

  3. Bring sugar and water to the boil and add the cinnamon.

  4. Stir in the almonds and simmer for 20 minutes.

  5. Cool for 1 minute then add the rose water.

  6. Return to the heat and cook until the sugar is completely dissolved and sticks to the almonds. (This will take about 5 minutes)

  7. Line 2 baking trays with greased aluminum foil.

  8. Pour the almonds onto the foil and separate them very quickly with two forks.

  9. Place the baking trays in the preheated oven for 5 minutes to glaze the almonds.

  10. Remove the almonds from the oven and leave to cool.
