Make paneer by squeezing lime juice into boiling milk.
Tie tightly in a muslin cloth to remove all liquid.
Do not throw away this liquid.
Chop fanugreek leaves finely and boil in 1/2 cup water till soft. Grind to a paste.
Cut paneer into 1/2" squares and deep fry to a golden brown.
Heat ghee and the methi paste.
Stir till it cooks.
Then add finely chopped tomatoes and other ingredients.
Cook till the ghee separates.
Add the paneer pieces and a little of the paneer water.
Cover and cook till paneer is soft and methi covers it.
