Ingredients

  • Mutton ½ kg
  • Rice ½ kg (soak rice for 30 minutes)
  • Onion 4 tbsp (fried)
  • Ginger paste 2 tbsp
  • Garlic paste 2 tbsp
  • Yogurt 2 tbsp (whipped)
  • Oil 1/3 cup
  • Rose water or kewarrah 1 tsp
  • Saffron few drops
  • Salt to taste
  • Whole All Spice:
  • Black cumin seeds 1 tsp
  • Bay leaf 1
  • Cinnamon stick 1 piece
  • Black pepper 10

Cooking Directions

  1. Boil the mutton in a large pan, with added 8 glasses of water, salt, ginger paste and garlic paste.

  2. When mutton is half done and water becomes 4 glass turn off the flame.

  3. In other pan add oil when oil is heated add ginger paste, garlic paste, whole all spice, salt, whipped yogurt and fry onions fry all ingredients until light brown.

  4. Add rice without water and also fried rice with spice after that add mutton soak and cook in a high flame for 5 minutes.

  5. After that when pilao is half cooked low flame until rice is completely cooked.

  6. Serve it with raita.
