Peking Chicken is chinese recipe which is cover cooked with spices and it turns superb in taste with sauce. Chicken must be skinned for a crisp taste texture.

  • Chicken 1 ½ kg (whole with skin)
  • Oyster sauce 4 tbsp
  • Dark Soya sauce 6 tbsp
  • Star anise 4
  • Paprika 1 tsp
  • All spice ½ tsp
  • Garlic 6 – 8 cloves
  • Chicken stock 4 – 5 cup
  • Oil for frying

Cooking Directions

  1. In a pan add chicken stock, Soya sauce, oyster sauce, all spice, cloves of garlic, paprika, star anise and chicken.

  2. Cover the lid and cook till the meat tenderizes.

  3. Keep flipping the chicken at regular intervals.

  4. Take only the chicken out and strain.

  5. Heat the remaining sauce till it thickens.

  6. The Peking sauce is ready.

  7. Place the chicken in a pan and pour hot oil over the chicken.

  8. Dish out and serve the chicken with the Peking sauce.
