Spicy vada is a popular dish that has broken all geographical and cultural barriers to become world-famous. Its nothing but crisp potato fritters encased in a gram flour batter, these are enjoyed occasionally by all.

  • Potatoes 4 (boiled and mashed)
  • Mint leaves 1 tbsp (chopped)
  • Coriander leaves 2 tbsp (chopped)
  • Pomegranate seeds 2 tsp (crushed)
  • Lemon juice 2 tsp
  • Red Chili flakes 2 tsp
  • All spice ½ tsp
  • Chat Masala ½ tsp
  • Brown onion 2 tbsp (crushed)
  • Salt to taste
  • For Batter:
  • Gram flour 1 cup
  • Red chili powder ½ tsp
  • Baking soda ¼ tsp
  • Water as required
  • Salt to taste

Cooking Directions

  1. For Batter: In bowl mix gram flour, salt, baking soda and red chili, mix with water to form a thick smooth batter.

  2. For Filling: In a bowl mix together salt, mashed potatoes, crushed pomegranate seeds, lemon juice and crushed brown onion.

  3. Then add coriander leaves, mint leaves, red chili, all spice, salt, chaat masala and shape into medium sized balls.

  4. Dip in prepared gram flour batter and deep fry on medium heat.

  5. Serve when it turns golden with mint chutney.
