  • Malabar bananas 6 ripe
  • Grated coconut 8 oz
  • Eggs 2
  • Raisins 2 tsp
  • Milk 1/4 pint
  • Vanilla essence
  • Sugar 2 oz
  • Butter 2 tbsp
  • Cloves 12
  • Crushed almonds 1 dessertspoon

Cooking Directions

  1. Wash bananas and steam, without removing the skin, till soft.

  2. Cool, peel and lay them in a flat dish.

  3. Cut each lengthwise and carefully remove the string of seeds.

  4. Mash with a fork to a smooth dough adding a little butter. Shape into 12 balls.

  5. Beat the eggs and stir in milk, sugar and almonds.

  6. Blend well together with the coconut and raisins.

  7. Melt a little butter and scramble the egg mixture till frothy.

  8. Add a dash of vanilla essence.

  9. Now take each banana ball, flatten it in the palm of your hand and pile a tsp of the egg mixture in the center, cover the stuffing carefully and roll into a ball again.

  10. Stick a clove into the top.

  11. Place in a dish and chill overnight. Serve with cream.

  12. If desired the balls may bed fried in hot ghee dipped in batter and served hot.
