Ingredients

  • For the Cake:
  • Unsalted butter 1/2 cup softened
  • Dark molasses 1/2 cup
  • Dark brown sugar 3/4 cup
  • Egg 2 (whisked lightly)
  • Whole milk 1/4 cup
  • All purpose flour 1 cup
  • Unsweetened cocoa powder 1/2 cup
  • Baking soda ¾ tsp
  • Salt ½ tsp
  • Ginger 1 tsp (ground)
  • Cinnamon 1 tsp (ground)
  • All spice ¼ tsp
  • Nutmeg ¼ tsp
  • Semisweet chocolate chips 3/4 cup
  • For the Glaze:
  • Confectioners sugar 1 cup
  • Heavy cream 4 ½ tsp
  • Vanilla essence ¼ tsp

Cooking Directions

  1. For the Cake: Preheat the oven to 180 degrees C. Grease and dust flour on a 9-inch bundt pan.

  2. Combine the butter, molasses, dark brown sugar and 1/4 cup water in a medium saucepan over medium-low heat. Cook and stir constantly, until the butter has melted. Then shift the mixture into a large bowl and allow cooling for 10 minutes.

  3. When it cooled, mix the eggs and milk into the molasses mixture.

  4. Sift together the flour, cocoa powder, baking soda, salt, ground ginger, cinnamon, allspice and nutmeg into a medium bowl. Gently fold the flour mixture into the molasses mixture, stirring just until combined, and then mix in the chocolate chips.

  5. Pour the batter into the prepared pan. Bake the cake for about 30 minutes, or until a toothpick inserted comes out clean. Allow to cool on wire rack.

  6. For the Glaze: Make the glaze by whisking together the confectioner’s sugar, heavy cream and vanilla essence until smooth.

  7. Once the cake has fully cooled, invert it onto a serving platter, drizzle with the glaze and serve.
