Ingredients

  • 625 ml sifted cake flour
  • 410 ml sugar
  • 7 ml baking powder
  • 7 ml bicarbonate of soda (baking soda)
  • 5 ml salt
  • 8 ml cinnamon powder
  • 8 ml ground nutmeg
  • 3 ml ground cloves
  • 150 gr butter - melted
  • 160 ml buttermilk
  • 315 ml mashed bananas
  • 2 eggs - beaten
  • Banana Icing
  • 375 ml sugar
  • 12.5 ml flour
  • 125 ml milk
  • butter - the size of an egg
  • 3 bananas

Cooking Directions

  1. Sift dry ingredients.

  2. Add butter, buttermilk and bananas. Beat for 2 minutes.

  3. Add eggs and beat for one minute. Pour into two sandwich baking tins. Bake in moderate oven - 180 degrees celcius, for 30 to 35 minutes.

  4. Allow to cool.

  5. Spread with banana icing and sliced bananas between layers.

  6. Decorate top with banana icing and banana slices.

  7. Banana Icing: Mix sugar, flour and milk.

  8. Place over medium heat, and let boil for 2 minutes. Take off heat.

  9. Add butter. Beat until thick.

  10. Cool.

  11. Decorate Banana Spice Cake.
