Frangipane is a filling made from or flavored like almonds. This filling can be used in a variety of ways, here we are using it in tartlets. It is mild and delicious kids are going to love it.

Ingredients

  • For Pastry:
  • Flour 1 cup
  • Salt 1 pinch
  • Butter 4 tbsp
  • For Filling:
  • Apricot jam 3 tbsp
  • Butter 4 tbsp
  • Caster sugar 2 tbsp
  • Egg 1
  • Almond essence ½ tsp
  • Flour 1 ½ tbsp
  • Almonds 2 tbsp (ground)
  • Flaked almonds 2 tbsp

Cooking Directions

  1. For the pastry, mix flour and salt and rub in the butter.

  2. Add required water and bind to a dough, roll out pastry on a floured surface and line the tart tins with it.

  3. Put 1 tsp of apricot jam on the base of each pastry shell.

  4. To make filling, beat butter and sugar till creamy, add in egg and almond essence, fold in flour and flaked almonds.

  5. Mix well and spoon it in the pastry cases.

  6. Arrange a few flaked almonds on top.

  7. Bake at 190 degrees C for 15 - 20 minutes or until golden.

  8. Meanwhile, heat apricot jam with a tbsp of water in a pan and sieve it to remove any fruity bits, brush over hot tarts and let tarts cool and serve.
