  • Whole wheat flour 1 lb
  • Cauliflower 1 lb
  • Onions 2
  • Green chilies 2
  • Dried pomegranate seeds (anardhana) 1 tbsp
  • Ginger 1½ inch piece
  • Coriander leaves 1 tbsp
  • Garam masala ½ tsp
  • Ghee
  • Salt to taste

Cooking Directions

  1. Chop cauliflower very fine or grate coarsely.

  2. Do not use the stalks.

  3. Sprinkle water with salt, put in cauliflower and let stand for ½ hour.

  4. Squeeze out the liquid and mix with finely chopped onions, finely chopped ginger, chopped coriander leaves, finely-chopped chilies, crushed pomegranate seeds and season.

  5. Sieve flour, add 2 tbsp ghee, a pinch of salt and enough water to knead to stiff dough.

  6. Cover and keep aside for 10 minutes.

  7. Divide into 6 portions and roll out into round thick pancakes.

  8. Spread with a little ghee.

  9. Divide the cauliflower into 6 portions and put a helping of the mixture in the center.

  10. Close up the stuffing carefully.

  11. Roll into a ball and roll out as thin as possible without letting the stuffing break through.

  12. Smear with ghee and fry on both sides on a heated tava till nicely brown.

  13. Serve hot.
