This recipe is also delicious using dried chopped apricots. Kheer flavoured with cardamom and saffron and cooked with dried fruits is considered heavenly food.

Ingredients

  • Raisins 25 g
  • Dried apricots, chopped 75 g
  • Pudding rice 100 g
  • Rose water 1 tbsp
  • Saffron 3 strands
  • Ground cardamom pinch
  • Carnation condensed milk 397 g can
  • Almond slivers 25 g
  • Pistachios, chopped 25 g
  • To finish, chopped pistachio

Cooking Directions

  1. Soak the dried fruits in a little hot water.

  2. Meanwhile place the rice in a pan with saffron and cardamom and 600 ml water, heat gently and bring to the boil.

  3. Simmer very gently for 20 minutes.

  4. Add the dried fruits and condensed milk and heat for a further 10 minutes, stirring continuously.

  5. Add the almonds and pistachio and take off the heat.

  6. Serve warm, finished with chopped pistachio.
