Ingredients

  • Small Bunch of Celery 1
  • Small Head Cauliflower, cut into flowerets 1
  • Carrots, thinly sliced 3
  • Small Courgettes 3
  • Frozen Green Beans, cooked and drained 20 ounces
  • White Onions, cooked 1 Small can
  • Marinate:
  • Vinegar 1/3 cup
  • Basil 2 tsp
  • Salt 1 tsp
  • Sugar 1 tsp
  • Garlic 5 Cloves (minced)
  • shallot or onion, 1 (minced)
  • Whole White/Black Peppercorns 1/2 tsp

Cooking Directions

  1. Mix the vinegar, basil, salt, sugar, garlic, whole black peppercorns and finely chopped onion in a bowl.

  2. Add the vegetables into the above liquid and pour into a jar and leave overnight.

  3. Keep refrigerated and use upto 3 months.
