Nihari is a delicasy made from mutton shank and spices. This dish originates from Lucknow, influences from the Nawabs cuisine and is widely popular in Pakistan. It is delicious and is mostly preferred for breakfast.

  • Mutton shanks ½ kg
  • Nahari masala powder 1 tbsp
  • Turmeric powder 1 tsp
  • Red chilli powder 1 tsp
  • Coriander powder 1 tsp
  • Whole all spice 1 tsp
  • Fenugreek seeds ½ tsp
  • Coriander leaves
  • Ginger garlic paste 1 tbsp
  • Yogurt 2 tbsp
  • Gram powder 2 - 3 tbsp (roasted)
  • Rose water ½ tsp
  • Khewra water ½ tsp
  • Onions 1
  • Cooking oil ½ cup
  • Green chili for garnishing (chopped)
  • Julinned ginger for garnishing

Cooking Directions

  1. Boil shanks until meat starts to leave bone and set aside.

  2. Heat oil in a deep frying pan and add fenugreek seeds, whole all spice and wait until it crackles.

  3. Fry onion till it turns brown.

  4. Then add ginger garlic paste, turmeric, red chili and coriander powder and a cup of water.

  5. Let water reduce and add yogurt, stir well and then add shanks.

  6. Cook on medium heat for 10 to 15 minutes and then add two cups of water followed by the nahari masala.

  7. Allow it to cook for a while.

  8. Add the roasted gram powder and cook until gravy thickens.

  9. Add rose and khewra water to gravy.

  10. Garnish with julienned ginger, chopped green chilli and coriander.
