Ingredients

  • Basmati rice ½ kg (washed and soaked for half an hour)
  • Chicken with bones 1kg
  • Cloves 3-4
  • Cinnamon sticks 2
  • Garlic cloves 3 tbsp (chopped)
  • Onion 1 (sliced)
  • Green cardamoms ½ tsp (ground)
  • Black pepper 1 tbsp (ground)
  • Salt to taste
  • Cumin seeds 1 tsp
  • Yogurt 1 cup
  • Sugar 1 tbsp
  • Carrot ½ (grated)
  • Raisins ½ cup
  • Oil 2-3 tbsp
  • Salt to taste

Cooking Directions

  1. Heat oil in a wok and add cloves, cinnamon sticks, garlic cloves, onions and fry.

  2. When the onions becomes light brown add the chicken and fry it till it turns light brown.

  3. Now add green cardamoms, black pepper, salt, cumin seeds, yogurt and mix well.

  4. Add a jug of water, cover it and cook for 10 to 15 minutes.

  5. Transfer the entire contents of the wok in a bigger pan.

  6. Drain water from the soaked rice and add them to the pan.

  7. Mix properly, cover and cook on low flame until the water dries up and the rice are well cooked.

  8. Now in another pan add sugar and ½ cup water.

  9. When it starts to boil add carrots and raisins and cook until the water dries up.

  10. Dish out the pilaf and garnish with the prepared carrot and raisin mixture.

  11. Serve hot.
