  • Tortilla bread 6 1/2 inch (16 cm)
  • Cheddar cheese, shredded 2/3 cup
  • Mozzarella cheese, shredded 1/3 cup
  • Parmesan cheese, shredded 1/3 cup
  • Black olives, sliced 3 tablespoons
  • Tomatoes, diced 3 tablespoons
  • Sour cream 1/4 cup (60 ml)
  • Spring onion, chopped for garnishing (optional)

Cooking Directions

  1. Preheat oven to 350 F (180 C).

  2. Cut Tortilla bread into 8ths and arrange onto baking sheet and bake for 7 - 8 minutes or until crisp.

  3. Take out and let it cool.

  4. In a small bowl mix together cheeses.

  5. Preheat broiler.

  6. Spread half the chips out onto a parchment paper lined baking sheet.

  7. Top with half the olives and tomatoes, and 1/3 cup of the cheese.

  8. Repeat with remaining olives and tomatoes.

  9. Sprinkle the top with the remaining cheese.

  10. Broil for 3 - 4 minutes or until heated through and cheese melts.

  11. Slide nachos onto a serving platter and top with spring onion and sour cream. Enjoy!
