Capsicum rice is liked by every one at my home, when you are not in mood of cooking, capsicum rice is the easiest option. It is all time favorite dish for my family and kids. Instead of eggs you can also replace it by chicken, mince or prawns. But in any way, it has an amazing taste.

Ingredients

  • Rice ½ kg
  • Capsicum 3 (orange, yellow and green sliced)
  • Spring onion ½ bunch
  • Eggs 2
  • Oil 4 tbsp
  • Salt 1 tsp
  • Garlic 1 tbsp (chopped)
  • Yellow food color ½ tsp
  • Black pepper 2 tsp
  • Soya sauce 4 tbsp

Cooking Directions

  1. Firstly, boil rice with yellow food color, drain and set it aside to cool down.

  2. In a pan, heat 1 tbsp oil and fry beaten eggs, scramble them into small pieces.

  3. Now add remaining oil, fry garlic in it.

  4. Then add capsicums, spring onion and rice in it.

  5. Also add soya sauce, salt and black pepper in it and mix it properly and turn off the stove.

  6. Delicious Capsicum Rice is ready to serve.
