We are used to that sour tasting karhi prepared with yogurt. But Ram Puri Karhi speaks a completely different language. It is prepared with buttermilk extracted while making butter and has a very buttery taste.

Ingredients

  • For Dumplings:
  • Gram flour ½ kg
  • Green chilies 2 – 3 (finely sliced)
  • Turmeric powder 1 tsp
  • Coriander powder 1 tsp
  • Red chili powder 1 tbsp
  • Carom seeds ½ tsp (ground)
  • Baking powder ½ tsp
  • Oil for frying
  • Salt to taste
  • For Karhi:
  • Buttermilk 1, ½ liter
  • Gram flour ½ cup
  • Oil ½ cup + 2 tbsp
  • Green chilies 2 – 3 (finely sliced)
  • Whole red chilies 4 – 5
  • Curry leaves 10 – 12
  • Whole cumin 1 tsp
  • Turmeric powder 1 tsp
  • Ginger garlic paste 2 tbsp
  • Red chili powder 1, ½ tbsp or to taste
  • Salt to taste

Cooking Directions

  1. For Dumplings: Mix all ingredients together.

  2. Gradually add in required water to form a smooth lump free batter.

  3. Heat oil in a pan and fry dumplings to a nice golden brown.

  4. For Karhi: Add red chili powder, gram flour, salt and turmeric powder to buttermilk, mix well till smooth.

  5. Heat 2 tbsp oil in a pan and fry cumin seeds for a minute.

  6. Then add green chilies and ginger garlic paste, sauté.

  7. Now add the prepared buttermilk mix stirring continuously.

  8. Cook on low heat until karhi thickens to desired quantity.

  9. Then add in fried dumplings.

  10. Heat the remaining oil in a frying pan and fry curry leaves and whole red chillies.

  11. Pour this oil in karhi, immediately cover tightly with lid and let it sit for 2-3 minutes.

  12. Ram Puri Karhi is ready. Serve hot with steamed rice.
