Ingredients

  • Mixed firm fish(monkfish, mackerel) 500 gms
  • Mussels 200 gms
  • Red Onion(chopped) 1
  • Garlic Cloves(chopped) 2
  • Oil 2 tbsp
  • Cumin Seeds 1 tsp
  • Ginger Paste 1 tsp
  • Cinnamon Sticks 1
  • Fresh Lemon(chopped) 1
  • Green Olives(stoned & chopped) 12
  • Fish stock Saffron(few strands) 200 ml
  • Cherry Tomatoes 100 gms

Cooking Directions

  1. Heat oil in a tagine and gently cook onion and garlic until soft.

  2. Add cumin, ginger, cinnamon stick, lemon and olives and cook for 2 minutes.

  3. Add fish stock and saffron and bring to a gentle simmer.

  4. Then add fish and cook for a couple of minutes.

  5. Add mussels and cherry tomatoes, season with salt and pepper and cover.

  6. Cook gently for 6-7 minutes.

  7. Serve on a bed of steamed couscous and sprinkle with freshly chopped coriander.
