Heat the butter in saucepan and add the semolina and almonds.Stir with a wooden spoon till brown.

  • Semolina (sooji) 120 gms
  • Butter 60 gms
  • Castor sugar 120 gms
  • Water 3/4 litre
  • Milk 3/4 litre
  • Blanched, chopped almonds 250 gms

Cooking Directions

  1. Heat the butter in saucepan and add the semolina and almonds.

  2. Stir with a wooden spoon till brown.

  3. In another pan add the sugar to the milk and water and very slowly bring to a boil.

  4. Pour this slowly over the browned semolina and nuts, stirring all the time over a low flame.

  5. When thick, cover with a clean cloth, then put the lid on, keeping on a very low flame till all the liquid has been absorbed.

  6. Pour into a wet mould. Turn out when cold and set.
