Mix the chicken with salt and white wine vinegar and leave to marinate for 15 minutes.
Blend the beaten egg, corn flour and coat the chicken strips.
Heat the oil in a pan or wok and add the chicken strips and deep fry for 3 minutes.
Then remove the chicken strips on paper towels.
Heat the oil again, and return the chicken with the bamboo shoots and fry until they are golden brown.
Again remove on paper towels.
Mix the sauce ingredients together in a bowl.
Now heat a pan and add the sauce mix and heat till slightly thick.
Serve the chicken pieces on a platter with sauce on top or in a separate bowl.
