Besan ki roti is made of gram flour. In this recipe of besan ki roti, gram flour is mixed with whole wheat flour, dries pomegranate seeds, green coriander-chillies, cumin and onion to make a deliciously flavored Besan ki roti.

Ingredients

  • Basin (gram flour) 1\2 kg
  • Whole wheat flour 1\2 kg
  • Oil 1\2 cup
  • Salt 2 teaspoon
  • Chilli powder 2-3 teaspoon
  • Whole red chili 6
  • Coriander leaves, chopped 1\2 cup
  • Green chilies fine chopped 4
  • Dried pomegranate seeds 3 tablespoon
  • Cumin seeds, zeera 2 teaspoon
  • Coriander seeds 2 tablespoon
  • Medium onion, finely chopped 2
  • Oil for frying

Cooking Directions

  1. Put all dry ingredients in a large bowl and mix well.

  2. Make a slight well in the center and add oil.

  3. Using finger tips, mix it into the flour.

  4. Add water a little at a time and knead into a soft pliable dough.

  5. Knead it thoroughly for several minutes until smooth.

  6. Cover with a damp cloth and leave to rest for at least 30 minutes.

  7. Divide the dough into 12 equal parts.

  8. Roll each into a smooth ball.

  9. Then roll each ball into a round of about 6 inches.

  10. Heat up a flat griddle pan or heavy frying pan.

  11. Test the heat by sprinkling a little dry flour on the surface.

  12. The temperature is correct when the flour burns immediately.

  13. Wipe out the surface with kitchen paper.

  14. Carefully place the round of dough on hot pan.

  15. Allow to cook for a minute then turn it over.

  16. Smear a little ghee on the top and then turn it over after a minute.

  17. The top side now will have small brown spots.

  18. Smear a little ghee on the top and on the surface of pan along the edges of roti.

  19. Turn it over again and repeat the process of smearing oil until the both sides are cooked and crisp.

  20. Remove from pan, smear with ghee and serve at once.

  21. Repeat with remaining dough.
