Ingredients

  • Sunflower oil 1 tbsp
  • Onion(diced) 1 small
  • Cumin seeds 2 tsp
  • Garlic cloves(crushed) 2
  • Fresh root ginger(grated) 1 tsp
  • Turmeric 1/2 tsp
  • Potatoes(cut into matchsticks) 625 g
  • Hot water 150 ml
  • Courgette(cut into matchsticks) 1
  • Plum tomatoes(chopped) 2
  • Garam masala 1/2 tsp
  • Coriander leaves(chopped) 4 tbsp
  • Mint leaves(chopped) 2 tbsp
  • Juice & lime rind
  • Salt

Cooking Directions

  1. Heat the oil in a large, nonstick wok or frying pan and add the onion.

  2. Stir fry over a medium heat for 5-6 minutes until softened.

  3. Add the cumin seeds, garlic, ginger and turmeric.

  4. Stir fry for 2-3 minutes and then add the potatoes with the measured water.

  5. Cook cover a high heat for 3-4 minutes, and stir in the courgette, tomatoes and garam masala.

  6. Stir and cook on high temprature for 3-4 minutes, remove from the heat and stir in the chopped hearbs and the lime rind and juice.

  7. Season well and serve immediately.
