Ingredients

  • Black dhal (urad) 8 oz
  • Oil 1 pint or
  • ghee 1 lb
  • Green chilies 6
  • Mustard seeds 1 tsp
  • Dry red chilies 4
  • Grated coconut 1 cup
  • Sprig curry leaves 1
  • Butter milk 2 pints
  • Salt to taste

Cooking Directions

  1. Grind the grated coconut to a fine paste with 4 green chilies and some salt, and mix with the buttermilk.

  2. Put a pan on the fire containing about a tbsp of oil.

  3. When hot, add the mustard seeds and red chilies.

  4. When the mustard begins to sputter remove the pan from the heat.

  5. Add the buttermilk and keep on one side.

  6. Remove the black skin of the gram dhal if necessary and soak in water for about 2 hours.

  7. Drain. Add salt to taste and grind dhal to a fine paste with out too much water.

  8. Chop the remaining green chilies and curry leaves and mix with the dhal paste.

  9. Put a pan on the fire with the remaining oil.

  10. When hot, make the past into small balls, each about the size of a lemon, and fry.

  11. Remove and put them in the prepared buttermilk.

  12. Keep for about 2-3 hours till they are well soaked and soft.
