In a bowl mix together plain flour, self raising flour, salt, sugar and oil.
Gradually add water and knead till a smooth dough is formed.
Cover and leave aside the dough to rise.
Divide the dough into portions and shape into small balls.
Brush each ball of puri with oil or dip a corner of ball in melted ghee or oil.
Roll out each ball into 4 to 5 inches round.
Heat oil in a wok and fry the puris, press the puri with a steel spoon while frying so that it will swell up like a ball.
Place the puri on an absorbent paper and serve.

Have any one tried this recipe ? i have tried many recipes but the puri tends to dry after being fried no matter how exact i follow the recipe, ingredients and the method.... So i wana know the basic secret that keeps the puri crispy as well as soft after cooking... like the one we eat in Pakistan and they remain velvety soft and dont tend to break at all....

Padma, self raising flour is all purpose flour with added raising agents. You can easily buy it from leading supermarket in your city.

Shamaila, you can use baking soda instead of self raising flour in this recipe. But make sure you balance it with quantity of flour.
can v use yeast or edible soda (khaney ka soda) in flour instead of self raising flour???????

Hi where did the sugar go? i think you forgot to mention the sugar. And in the ingrediant its written oil for frying and in the procedure no.1 you have mentioned oil too, but doesn't say how much. please clarify. And please make sure you have names in urdu as well, as many people get confused between plain flour, wheat flour and self raising flour. thanx.

VERY DUM RECIPE
I like this recipe very much. I have tried it successfully many a times. Keep in mind that swelling up of Puri like a ball depends on the FRESHNESS of self-rising flour.
