Tomato puree:Take oil in a pan, add 2 blanched tomatoes, ginger, garlic 1/2 tsp each, salt, oregano 1/2 tsp.
Sugar a pinch, add tomato ketchup and cook till oil comes on top, keep it aside.
Now chop all the other vegetables.
Beat eggs add seasonings and chopped vegetables.
Heat 1 2/2 tbsp oil in a pan, add the egg mixture cook till set.
Add grated cheese cook on both sides till light golden brown.
Take out in a plate.
Put 2 tbsp tomato puree, on this sprinkle celery and serve.
