Brinjals are stuffed with sour and hot spices and then cooked in a dry curry. Enjoy with rice and tomato chutney.

  • Round brinjals 1/2 kg
  • Onions 2
  • Cloves of garlic 6
  • Ginger 1" piece
  • Salt 1, 1/2 tsp
  • Turmeric powder 1/2 tsp
  • All spice 1 tsp
  • Tomatoes 2
  • Chilli powder 1 tbsp
  • Oil 1 tbsp
  • Mango powder 1 tsp
  • Coriander leaves 1/2 bunch

Cooking Directions

  1. Remove stems and cut brinjals into 4, leaving tops intact.

  2. Mix mango powder, salt, chilli powder and some coriander and fill brinjals with this dry mixture.

  3. Grind ginger and garlic.

  4. Chop onions and tomatoes.

  5. Heat oil and fry ginger/garlic paste.

  6. Add onions and brown then add tomatoes.

  7. Season with salt, chilli powder and turmeric powder.

  8. Arrange brinjals in this and cook till done.

  9. Sprinkle with all spice and coriander. Serve hot.
