Ingredients

  • Cornstarch 1/2 cup
  • Flour 1/4 cup
  • Sugar 1 1/2 cup
  • Ghee 1/3 cup
  • Saffron 1/2 tsp
  • Rose Water 1 tbsp
  • Almonds 2 tsp
  • Pistachios 2 tsp
  • Red, Yellow, Orange or Green Food Colour

Cooking Directions

  1. Combine the cornstarch and flour soak in 2 cups of water overnight.

  2. Decant the water, add another 2 cups water, stir and leave to rest for 3 hours.

  3. Again decant water and add 2 more cups of water and set aside.

  4. After 1 hour discard half of the surface water.

  5. Stir thoroughly. Add food colour as you desire.

  6. Make syrup adding 1 cup of water to the sugar in a saucepan with handle.

  7. Bring to a boil. Stir in the cornstarch mixture very slowly over low heat.

  8. Add the saffron. Keep on stirring over moderate heat, when it starts to thicken add the ghee, 2 to 3 spoons at a time.

  9. Add rose water. Stir constantly until very thick.

  10. Remove from the fire. Sprinkle the almonds and pistachios onto a greased square shaped dish.

  11. Transfer the haluwa to the dish.

  12. Spread 2.5cm (1") thick. Let to cool.

  13. Cut into square or diamond shapes.

  14. After removing fron heat you have to transfer the haluwa as quickly as possible, otherwise it will not spread nicely.

  15. So make the dish ready before cooking. Serve as dessert.
